I had already seen several times making churros with choux pastry so I tried 🙂
good very honestly it doesn t have the taste or texture of churros at all but I must admit that it is really very very good! light and well ventilated
I wanted to change a bit in terms of shapes and I absolutely do not regret 😍😍😍😍
to do in the morning to cook in the afternoon:
choux pastry :
160g of water
100g of milk
10g of sugar
100g butter
1 pinch of salt
150g flour
4 eggs
Cut the butter into small pieces and then boil it with the liquids, salt and sugar. Sift the flour, add it all at once and stir vigorously. Cook the resulting breadcrumbs for a few more minutes. Then cool the preparation, then add the eggs 1 by 1 (until you get a slightly brittle ribbon when you lift the spoon).
put in a pastry bag
grease the reverse side of a muffin tin
then poach in the round by making 2 or 3 turns as in the photo
place in the freezer until completely frozen (4 / 5h)
heat your fryer over very low heat and immerse each round (1 at a time) and cook very slowly (be careful, it swells) cooking too quickly will color them but it will not be cooked inside, turn them often, drain and sprinkle icing sugar
I was able to make 6 large donuts with the rest of the dough I made mini churros 😉
